Grilled Peanut Tofu Skewers
Did you know you can cook tofu in just 2 to 3 minutes using a sandwich press or electric grill? It’s hands-down my greatest tofu hack! The sandwich press chars up the tofu perfectly while keeping it tender inside, and when coated in a drool-worthy peanut sauce, you’ve got the ultimate quick and flavourful appetiser. You could even add them to a nourish bowl or stir-fry to bump up the protein. So simple, so tasty, and next level satisfying!

Grilled Peanut Tofu Skewers

Ingredients:
Recipe:
- 500g extra firm tofu, pressed
- 1/2 cup peanut butter
- 1 tbsp yellow curry paste
- 1/2 clove garlic, diced
- 1.5cm knob ginger, diced
- 1 tbsp rice malt syrup
- 1 tbsp tamari
- juice of half a lemon
- 1 tbsp water (+ 1 tbsp for remaining)
- pinch of pepper
Garnish:
- sesame seeds
- chopped fresh herbs, such as coriander or parsley
Preparations:
- Slice the tofu into 8 rectangles, roughly 1-1.5cm thick. Push a skewer into the base of each.
- In a small bowl combine the peanut butter, curry paste, garlic, ginger, rice malt syrup, tamari, lemon juice, 1 tbsp of water and pepper. Mix until well combined. The consistency should be on the thicker/pastier side.
- Dollop 2/3 of the peanut satay over the skewers and use a spoon to coat each piece. Optionally marinate in the fridge for 30 minutes to 1 hour.
- Add 1 tbsp of water to the remaining peanut sauce and mix well. The consistency should be runnier/more sauce-like.
- Heat a sandwich press or electric grill. Place the tofu skewers on top, 4 at a time, and close the lid. Cook for 2 minutes, or until golden. Remove and repeat for remaining skewers.
- Line the skewers on a serving dish and top with the extra peanut satay, sesame seeds and fresh herbs.
