Choc Bounty Chia Puddings
Spend sun-drenched spring mornings by the beach fuelled by my high-protein choc bounty chia puddings. Featuring layers of a high-protein silken tofu chocolate mousse and a vanilla coconut chia pudding. A sweet, healthy and light breakfast with over 30g of protein that is perfect for meal prep.

Ingredients:
Silken Tofu Choc Mousse:
- 1 block (300g) silken tofu
- 1/4 cup cacao powder
- 1 tbsp freeze dried instant coffee
- 2 tbsp protein coconut yoghurt
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- pinch of salt
Vanilla Coconut Chia Pudding:
- 1/2 cup chia seeds
- 1/4 cup protein coconut yoghurt
- 1/2 cup vanilla protein powder
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 & 1/2 cups soy milk
Garnish:
- 1/2 cup protein coconut yoghurt
- 1 tsp cacao powder
Preparations:
- Add all chocolate mousse ingredients to a high-speed blender and blend until smooth. Divide the mixture between three jars, seal with lids, and refrigerate for at least 4 hours or overnight.
- In a small bowl, combine all chia pudding ingredients and stir until well mixed. Cover with cling wrap and refrigerate for at least 4 hours or overnight.
- Once both the mousse and chia pudding have set, assemble the jars. Spoon the chia pudding evenly over the mousse in each jar.
- Top each jar with a layer of protein coconut yoghurt and a dusting of cacao powder.
- Refrigerate until ready to enjoy.
