Smoky Red Lentil Pasta

Ingredients:

Smoky Red Lentil Pasta:

  • 400g red lentil pasta
  • 1 tbsp extra-virgin olive oil
  • 1 brown onion, diced
  • 2 cloves garlic, diced
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 2 tbsp nutritional yeast
  • 2 tbsp tomato paste
  • 1 tbsp rice malt syrup
  • 1 tbsp balsamic vinegar
  • 1 tbsp tamari
  • 2 tsp Dijon mustard
  • 1 can (400g) crushed tomatoes
  • 3 cups vegetable broth
  • 1 cup dry red lentils, soaked in water for 30 minutes and drained

Optional Garnish:

  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp hemp seeds
  • 2 tsp chilli flakes

Preparations:


  1. Heat olive oil in a saucepan over medium heat. Add the onion and sauté for 3 to 4 minutes, or until translucent. Add the garlic, smoked paprika, thyme, nutritional yeast, salt and pepper and sauté for a further minute.

  2. Add the tomato paste, Dijon mustard, balsamic vinegar, tamari and rice malt syrup. Cook for a few minutes,  stirring regularly.

  3. Stir in the crushed tomatoes, vegetable broth and pre-soaked red lentils. Increase heat and bring to a boil, then reduce to a simmer and cook for 20 minutes, or until thickened and the lentils are tender. Remove from heat.

  4. Meanwhile, bring a large pot of water to a boil. Add the red lentil pasta and cook for 10 minutes, or until al dente. Drain and mix in to the lentil sauce.

  5. Transfer to serving bowls and garnish with the hemp seeds, fresh parsley and chilli flakes.
