Pistachio Matcha White Chocolate Cookies

Ingredients:
Cookies:
- 1 and 1/2 cups all-purpose flour
- 1 tbsp cornflour
- 3 tsp matcha powder
- 1 tsp baking soda
- 1/2 cup plant-based butter, softened to room temperature
- 1/2 cup Pistachio Matcha Crema
- 1 cup coconut sugar
- 1 tsp vanilla extract
- 1 flax egg (1 tbsp flaxseed meal + 2 tbsp water)
- 3 tbsp maple syrup
- 2 tbsp soy milk
- 100g plant-based white baking chocolate, roughly chopped
Garnish:
- Pistachios, roughly chopped
- Pistachio Matcha Crema
- Flaky sea salt
Preparations:
- Preheat the oven to 175°C and line a baking tray.
- In the bowl of a stand mixer fitted with a paddle or whisk attachment, add the plant-based butter and Pistachio Matcha Crema. Begin mixing, slowly adding the coconut sugar. Beat for about 2 minutes, or until the mixture is thick, creamy, and lighter in colour.
- In a large bowl, sift together the flour, matcha powder, cornflour, and baking soda. Add the creamed butter mixture, vanilla extract, flax egg, maple syrup, and soy milk. Mix until well combined—this may take a few minutes. Finally, fold in two-thirds of the white chocolate.
- Roll the dough into 6 balls and place them on the prepared baking tray. Press the remaining third of the white chocolate into the tops of the cookies. Bake for 12 minutes, or until the edges are just golden.
- Allow the cookies to cool on the tray for 5 minutes, then transfer to a cooling rack to cool for another 5 minutes to firm up. Garnish with Pistachio Matcha Crema, chopped pistachios, and a sprinkle of flaky sea salt.
