  • 10 Medjool dates, pitted and soaked in hot water for 5 to 10 minutes and drained
  • 1 cup canned full-fat coconut milk, plus more if needed
  • 1/3 cup peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract 

Preparations:


  1. Blend the dates, coconut milk, peanut butter, maple syrup, and vanilla extract in a high-speed blender until completely smooth and creamy, adding a splash of extra coconut milk if needed to loosen the mixture.

  2. Stop to scrape down the sides as you go to ensure everything is fully incorporated. Continue blending until the caramel is thick, glossy, and pourable, adjusting the consistency to your preference.

  3. Use immediately or chill to thicken further, depending on how you plan to serve it.
