Ingredients:

Caramelised Banana and Dates:

  • 1/2 tbsp extra virgin olive oil
  • 2 ripe bananas, sliced into 0.5cm thick coins
  • 6 Medjool dates, pitted and diced
  • 2 tbsp maple syrup 
  • 1/2 tsp ground cinnamon

Yoghurt:

  • 1 cup vanilla coconut yoghurt

Optional Garnish:

  • extra virgin olive oil
  • flaky sea salt

Preparations:


  1. Heat olive oil in a frying pan over medium.

  2. Add the banana coins and chopped dates and cook for 1 to 2 minutes. Flip the banana coins, add the maple syrup and cinnamon and cook for a further 1 to 2 minutes, stirring regularly. Remove from heat.

  3. Spread the coconut yoghurt over a serving plate. Top with the caramelised banana and date mix and optionally garnish with a drizzle of extra virgin olive oil and a pinch of flaky sea salt.

  4. Serve with toast, fruit sticks or on top of oats.
