Middle Eastern-Inspired Nachos

Say hello to the ultimate sharing platter: Middle Eastern Inspired Nachos. A colourful, crunchy twist on a classic crowd-pleaser. Crispy pita chips dusted with za’atar form the base, topped with warm, golden falafel burger crumbles, creamy lemon-tahini drizzle, fiery green zhoug and fresh toppings. Ingredients:

Base:

  • 5 small pita
  • 2 tbsp extra virgin olive oil
  • 1 tsp za’atar
  • pinch of salt

Falafel Burger Layer:

Sauces:

  • 3 tbsp tahini
  • juice of half a lemon
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1–2 tbsp water
  • pinch of salt
  • Tahina Goods Green Zhoug 

Toppings:

  • 1 x 400g can chickpeas, drained and rinsed
  • 1 Lebanese cucumber, diced
  • 1 cup cherry tomatoes, diced
  • 3 tbsp pomegranate seeds
  • 3 tbsp fresh parsley, roughly chopped
  • 2 tbsp fresh mint, roughly chopped
  • 2 tbsp pickled onions
  • 2 tbsp vegan feta, crumbled
  • 1 tbsp pine nuts

Preparations:


  1. Heat oven to 180°C and line two baking trays.

  2. Cut pita into chip sized pieces, toss with olive oil, salt, and za’atar, and spread over a lined baking tray. Bake for 8–12 minutes until golden and crisp. Remove from oven and allow to cool.

  3. Increase oven temperature to 200°. Place the falafel burgers on a lined baking tray and bake for 15 minutes.

  4. Meanwhile, whisk together tahini, lemon juice, cumin, garlic powder, salt, and water until smooth and pourable. Adjust thickness with more water as needed.

  5. Place the pita chips on a large serving platter or shallow bowl. Break apart the falafel burgers and scatter over the top.

  6. Add the chickpeas, tomatoes and cucumber and drizzle generously with the tahini sauce, followed by dollops of green zhoug.

  7. Sprinkle over the pomegranate seeds, pickled onions, chopped herbs, vegan feta and pine nuts and serve.
