Can you believe that there is almost 30g of protein in this wee little jar? The secret is a combination of silken tofu, vanilla protein powder and cashew butter. This is a great breakfast option if you love meal prepping and want to switch up your regular overnight oats. Or, if you just love the coffee, cream and chocolate flavour of a classic tiramisu, like me!

Breakfast Tiramisu Pudding

Or, if you just love the coffee, cream and chocolate flavour of a classic tiramisu, like me!

Ingredients:

Cream:

  • 300g silken tofu
  • 2 Medjool dates, soaked in hot water for 5 minutes and drained
  • 1 small banana
  • 1 tsp vanilla extract
  • 1/2 cup vanilla protein powder

Base:

  • 1 & 1/4 cup almond meal
  • 1/4 to 1/3 cup vanilla protein powder
  • 1 & 1/2 tbsp instant coffee
  • 2 tbsp runny cashew butter
  • 2 tbsp water (plus more depending on how runny your nut butter is)
  • 1 tbsp rice malt syrup
  • 1 tsp vanilla extract
  • pinch of salt

Top:

  • 1 tsp cacao powder

Preparations:


  1. To a food processor, add the silken tofu, dates, banana, vanilla extract and vanilla protein. Blend until smooth.

  2. To a small bowl, add the almond meal, vanilla protein, instant coffee and salt. Mix until well combined.

  3. Add the cashew butter, water, rice malt syrup and vanilla extract. Mix until a dough-like consistency. If too dry, add more water.

  4. Roll the dough into three balls and push each ball into the base of a jar.

  5. Divide and top with the silken tofu cream and dust cacao powder on top. Set in the fridge for 4 hours or overnight.
