No-Bake Tiramisu

Ingredients:
Base:
- 1 cup medjool dates (soaked in hot water for 5 minutes and drained)
- 1 & 1/2 cups rolled oats (gf oats for gluten-free)
- 1 cup desiccated coconut
- 1 cup walnuts
- 2 tbsp instant coffee or decaf instant coffee
- 2 tbsp oat milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- pinch of salt
Cream:
- 1 cup cashews (soaked in hot water for 10 minutes and drained)
- 3 medjool dates (soaked in hot water for 5 minutes and drained)
- 1/3 cup vanilla protein powder
- 1 tsp vanilla extract
- 1/2 cup + 1 tbsp oat milk (or gf plant milk)
Garnish:
- cacao or cocoa powder
Preparations:
- Place all base ingredients into a high-speed blender or food processor. Process until sticky but with some whole walnut pieces remaining.
- Press the base into a lined container and set it aside in the fridge.
- Place all cream ingredients into a high-speed blender or food processor and process until smooth. Add an extra dash of oat milk if needed. Smooth over with the back of a spoon.
- Dust cacao powder on top and set in the freezer for 2 to 3 hours.
- Remove from the freezer, slice and enjoy! Store in the fridge for 3 – 4 days.
