Ingredients:
Banana:
- 2 ripe banana
Berry Compote:
- 1/3 cup frozen blueberries
- 1/4 arrowroot flour
- 1/4 tsp vanilla extract
- pinch of salt
Protein Whip:
- 1/2 cup vanilla coconut yoghurt
- 1/4 cup vanilla protein powder
- 1 tbsp peanut butter
- 1/2 tbsp rice malt or maple syrup
- 1/4 tsp vanilla extract
Other:
- 2 slices sourdough, or choice of bread
- ground cinnamon, for dusting
Preparations:
- Peel and slice the banana into coins, then place them onto a lined air fryer tray.
In a small round baking ramekin, add the frozen blueberries, arrowroot flour, vanilla extract, and a pinch of salt. Mix well to combine. - Place the ramekin with the blueberries in the bottom layer (or right side, depending on your air fryer), and the tray with the banana slices in the top layer (or left side). Air-fry at 200°C for 15 to 20 minutes, stirring the blueberries halfway through. Remove from the air fryer once the banana is golden and soft, and the blueberries are tender and gooey.
- Meanwhile, in a small bowl, mix the coconut yoghurt, vanilla protein powder, peanut butter, rice malt syrup, and vanilla extract until thick and smooth. If the mixture is too dry, add a bit more coconut yoghurt.
- Toast the sourdough slices and spread the protein whip on top. Top with the air-fried banana and blueberry compote, then finish with a dusting of cinnamon.
