Smoky, creamy baba ganoush spread over fluffy, golden flatbread, finished with za’atar, fresh parsley, and a drizzle of chilli oil. It’s simple, bold, and seriously addictive. I made this while teaching my partner how to roast eggplant and blend up the good stuff. A little cooking lesson turned into a lot of laughs (and a surprisingly impressive entertaining recipe). Smoky Baba Ganoush Flatbread

Ingredients:
Baba Ganoush:
- 5 tbsp olive oil
- 2 medium eggplants
- 1/4 cup tahini
- juice of half a lemon
- 2 cloves garlic, skin removed
- 1/4 tsp smoked paprika
- pinch of salt and pepper
Bread:
- 1 large flatbread, or choice of focaccia or pita bread
Garnish:
- 2 tbsp fresh parsley, chopped
- 1 tbsp za’atar
- 2 tsp Italian style chilli oil
Preparations:
- Preheat the oven to 220°C. Place each eggplant on a piece of foil large enough to wrap it completely. Drizzle each with 2 tablespoons of olive oil and season with a pinch of salt and pepper. Rub the oil and seasoning over the eggplants with your hands, then wrap them tightly in the foil.
- Place the wrapped eggplants on a baking tray and roast for 45 to 50 minutes, or until the skin is tender and browned. Remove from the oven, open the foil slightly, and let them cool for 10 minutes.
- Set a strainer over a large bowl. Peel off the skins and discard them, they should come off easily. Place the eggplant flesh into the strainer and press down with a spoon to remove any excess liquid. Discard the liquid.
- Transfer the drained eggplant to a food processor or high-speed blender. Add the tahini, lemon juice, garlic, smoked paprika and a pinch of salt and pepper. Blend until smooth, slowly drizzling in 1 tablespoon of olive oil to achieve a smooth and creamy consistency.
- Meanwhile, place the flatbread on a lined baking tray and bake in the oven for 5 to 7 minutes, or until golden and toasted.
- Spread the baba ganoush over the toasted flatbread. Garnish with chopped parsley, za’atar, and chilli oil. Slice and serve.
