Ingredients:
Garlic Soy Enoki Mushrooms:
- 360g enoki mushrooms
- 2 cloves garlic, minced
- 2 tbsp soy sauce or tamari
- 1 and 1/2 tbsp maple syrup
- 1 and 1/2 tbsp sriracha
- 2 tbsp olive oil
- pinch of salt and pepper
Optional Toppings:
- fresh coriander, chopped
- spring onions
- dried shallots
- chilli flakes
- sesame seeds
Preparations:
- Trim the roots off the enoki mushrooms, separate them into chunks, and pat dry.
- In a small bowl, mix the soy sauce, maple syrup, sriracha and a pinch of salt and pepper.
- Heat a pan over medium heat with a tbsp of olive oil, add the garlic and sauté for 30 seconds.
- Add mushrooms, and pour over the remaining tbsp of olive oil. Stir and pour over the sauce.
- Cook for 3 to 5 minutes, letting the mushrooms soften and the sauce thicken slightly, flipping halfway to coat them evenly.
- Transfer to a plate and optionally garnish with your choice of coriander, spring onions, dried shallots, chilli flakes, and/or sesame seeds.
