Ingredients:
Muffins:
- 2 ripe bananas, mashed
- 1 and 1/4 cup all-purpose flour, sifted
- 3/4 cup maple syrup
- 1 tsp baking powder
- 1 cup fresh blueberries
Optional Add-Ins:
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
Preparations:
- Preheat oven to 175°C and grease a 12-hole mini muffin tray.
- Mix together the mashed banana and maple syrup (optionally mixing in the vanilla extract). Add the flour and baking soda (and optionally the cinnamon) and mix until well combined.
- Gently fold through the blueberries.
- Spoon the batter into the muffin tray and bake for 12 – 15 minutes, or until the tops spring back when touched.
- Allow to coo for 5 minutes and serve.
