Cook Time: 15 Minutes

Serves: 3

Ingredients:

French Toast:

  • 1 cup soy milk
  • 2 tbsp Pistachio Matcha Crema
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 6 slices choice of bread, I used sourdough
  • 2 tbsp vegan butter
  • pinch of salt

Optional Toppings:

  • Pistachio Matcha Crema
  • vanilla coconut yoghurt
  • fresh berries
  • pistachios, roughly chopped
  • matcha, for dusting

Preparations:

  1. Whisk together the soy milk, Pistachio Matcha Crema, vanilla extract, all-purpose flour and a pinch of salt in a small bowl. Pour into a shallow dish.

  2. Dip each slice of bread into the mixture, ensuring both sides are well coated.

  3. Heat the butter in a pan over medium to high. Once melted, place the coated bread into the pan and cook for a few minutes on each side, or until crispy and golden brown. Repeat for each slice of bread, adding more butter if needed. Cook two slices at a time if pan size allows.

  4. Transfer the French toast to serving plates and top with a drizzle of the Pistachio Matcha Crema and the remaining topping ingredient.
