Mini Peanut Butter and Jam Cinnamon Scrolls

These mini scrolls take the iconic pairing of peanut butter and jam and turn it into a lighter, snackable bake. Flaky puff pastry is rolled with a warm peanut butter, maple and cinnamon filling, baked until golden, then finished with a sweet jam and coconut yoghurt frosting. Think gooey centre, crisp layers, and just enough sweetness to make them feel indulgent without being heavy. They’re perfectly portioned for a snack or a light dessert!

Prep Time: 15 Minutes

Cook Time: 30 Minutes

Serves: 12

Ingredients:

Scrolls:

  • 1 cup peanut butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 2 1/2 tsp ground cinnamon
  • 2 sheets frozen puff pastry, thawed

Frosting:

  • 2/3 cup vanilla coconut yoghurt
  • 1/4 cup store-bought berry jam
  • 1 tsp vanilla extract

Garnish:

  • 12 tsp store-bought berry jam, to garnish
  • 2 tbsp freeze-dried strawberries, crushed

Preparations:

  1. Preheat the oven to 200°C and line a large baking tray with baking paper.

  2. In a bowl, mix together the peanut butter, maple syrup and vanilla until smooth.

  3. Lightly dust a surface with flour and lay down flat one sheet of puff pastry. Spread half of the peanut butter mixture over the sheet and dust with half of the cinnamon.

  4. Gently roll the puff pastry vertically from one side to the other and press the border to seal the roll. Using a sharp knife, cut the roll into 6 evenly-sized rolls.

  5. Repeat steps 3 and 4 for the other sheet of puff pastry with the remaining peanut butter mixture and cinnamon.

  6. Line the rolls on the baking tray and bake in the oven for 25 to 30 minutes, or until puffed and golden on top. Transfer to a wire rack and allow to cool.

  7. While the rolls cool, mix together the coconut yoghurt, jam and vanilla until well combined.

  8. Once the rolls are fully cooled, spread the frosting over the top of each roll.

  9. Finish each roll with a dollop of jam and a scatter of crushed freeze-dried strawberries.
