Ingredients:
Main:
- 500 g shelf stable gnocchi, uncooked
- 1 red onion, sliced
- 1/2 capsicum, sliced
- 1 small head broccoli, cut into florets
- 1/2 medium eggplant, cubed
- 400g seitan, sliced or cubed
- ¼ cup extra virgin olive oil
- juice of 1/2 a lemon
- pinch of salt and black pepper
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp chilli flakes (optional)
Crispy Topping:
- 1/3 cup breadcrumbs
- 2 tbsp nutritional yeast
To Serve:
- 5 tbsp store-bought or homemade pesto
- 2 tbsp hemp seeds
- drizzle of extra virgin olive oil
Preparations:
- Preheat the oven to 200 °C.
- In a large baking dish or tray, combine gnocchi, eggplant, broccoli, capsicum, red onion, seitan, garlic powder, smoked paprika, nutritional yeast, chilli flakes, salt, and pepper.
- Drizzle with olive oil and lemon juice, then toss well until everything is evenly coated.
- Mix the breadcrumbs with the nutritional yeast, then sprinkle half over the tray.
- Roast for 35 to 40 minutes, stirring halfway through and adding the remaining breadcrumbs, until the vegetables are tender and the gnocchi are lightly golden.
- Remove from the oven and dollop the pesto over the hot bake. Toss gently so the pesto coats everything while keeping some crumbs crispy.
- Sprinkle with hemp seeds and, if desired, finish with a light drizzle of olive oil. Serve hot.
