Banoffee Date Cups
These banoffee date cups are a naturally sweet, no-bake treat made with soft Medjool dates, fresh banana, a creamy tahini coconut yoghurt filling, and a rich dark chocolate topping. The base couldn’t be any more simple, just flatten a date and press it into a muffin tray to form a cup. They’re easy to make, healthier, and perfect for a low effort dessert or snack.

Banoffee Date Cups
These banoffee date cups are a naturally sweet, no-bake treat made with soft Medjool dates, fresh banana, a creamy tahini coconut yoghurt filling, and a rich dark chocolate topping. Ingredients:
Base:
- 18 Medjool dates
- 1/2 ripe banana, sliced into 0.5cm thick coins
Filling:
- 1/3 cup runny tahini
- 1/3 cup maple syrup
- 1/4 cup vanilla coconut yoghurt
- 1 tsp vanilla extract
- pinch of salt
Top:
Preparations:
- Lightly grease a muffin tray or line with paper liners.
- Open each Medjool date and press it flat, then press into the base of each muffin cavity to form a cup-like shell. I used two to three Medjool dates per cup.
- Place two banana coins into each date base.
- In a bowl, whisk together the tahini, maple syrup, coconut yoghurt, vanilla extract, and salt until smooth and creamy.
- Spoon the filling evenly over the banana layer in each cup. Set aside in the freezer.
- Meanwhile, melt the dark chocolate using a microwave or double boiler until smooth.
- Spoon or drizzle the melted chocolate over each cup to cover the top.
- Freeze for 1 hour, or until set, and serve.
