Banoffee Date Cups

These banoffee date cups are a naturally sweet, no-bake treat made with soft Medjool dates, fresh banana, a creamy tahini coconut yoghurt filling, and a rich dark chocolate topping. The base couldn’t be any more simple, just flatten a date and press it into a muffin tray to form a cup. They’re easy to make, healthier, and perfect for a low effort dessert or snack.

Banoffee Date Cups

These banoffee date cups are a naturally sweet, no-bake treat made with soft Medjool dates, fresh banana, a creamy tahini coconut yoghurt filling, and a rich dark chocolate topping. The base couldn't be any more simple, just flatten a date and press it into a muffin tray to form a cup. They’re easy to make, healthier, and perfect for a low effort dessert or snack.

Ingredients:

Base:

  • 18 Medjool dates
  • 1/2 ripe banana, sliced into 0.5cm thick coins

Filling:

  • 1/3 cup runny tahini
  • 1/3 cup maple syrup
  • 1/4 cup vanilla coconut yoghurt
  • 1 tsp vanilla extract
  • pinch of salt

Top:

Preparations:


  1. Lightly grease a muffin tray or line with paper liners.

  2. Open each Medjool date and press it flat, then press into the base of each muffin cavity to form a cup-like shell. I used two to three Medjool dates per cup.

  3. Place two banana coins into each date base.

  4. In a bowl, whisk together the tahini, maple syrup, coconut yoghurt, vanilla extract, and salt until smooth and creamy.

  5. Spoon the filling evenly over the banana layer in each cup. Set aside in the freezer.

  6. Meanwhile, melt the dark chocolate using a microwave or double boiler until smooth.

  7. Spoon or drizzle the melted chocolate over each cup to cover the top.

  8. Freeze for 1 hour, or until set, and serve.
