High-Protein Açai Bowl with Vanilla Cream
The texture of an açai bowl is everything. I’d say it’s just as important as taste. Luckily, this açai bowl has got both bases covered and it’s only 4 ingredients. Featuring frozen açai, frozen bananas, vanilla protein powder and frozen blueberries. To bump up the protein even more, I’ve added my go-to vanilla cashew protein cream. Garnish with your choice of granola, fresh berries, banana or nut butter.

High-Protein Açai Bowl with Vanilla Cream

Ingredients:
Açai Bowl:
- 2 x 100g packets of frozen açaí
- 2 frozen bananas
- 1/2 cup frozen blueberries
- 1/2 cup vanilla protein powder
Vanilla Cashew Protein Cream:
- 1 cup coconut yoghurt
- 1/2 cup cashews, soaked in hot water for 10 minutes and drained
- 1/2 cup vanilla protein powder
- 2 tbsp rice malt syrup
- 1 tsp vanilla extract
Optional Garnish:
- fresh berries
- banana, sliced
- granola
- nut butter
Preparations:
- To a high-speed blender or food processor, add the coconut yoghurt, cashews, protein powder, rice malt syrup and vanilla. Process until smooth and set aside.
- To a high-speed blender or food processor, add the açai, frozen blueberries, frozen banana and protein powder. Process until smooth and creamy.
- Scoop the açai into a bowl and top with banana slices, strawberries, cashew protein cream and granola.
