High-Protein Miso Soba Noodle Salad

I’m a sucker for a noodle salad, especially when it packs the flavour and protein that this one does! Featuring soba noodles for the slurp factor, crispy baked tofu and edamame beans for protein and cucumber, spring onions, coriander and mint for freshness. The star of the salad is the miso tahini sauce, which is whipped up in one bowl and is so umami and delicious that you’ll want to drink it!

High-Protein Miso Soba Noodle Salad

I’m a sucker for a noodle salad, especially when it packs the flavour and protein that this one does! Featuring soba noodles for the slurp factor, crispy baked tofu and edamame beans for protein and cucumber, spring onions, coriander and mint for freshness. The star of the salad is the miso tahini sauce, which is whipped up in one bowl and is so umami and delicious that you'll want to drink it!

Ingredients:

Miso Tahini Sauce:

  •  1/3 cup tahini
  • 1 tsp garlic powder
  • 1/2 tsp ginger paste
  • 1/3 cup water
  • 1 heaped tbsp miso paste
  • 1 heaped tbsp rice malt syrup
  • 1 tbsp toasted sesame oil
  • juice of a lime
  • 2 tbsp tamari
  • pinch of salt and pepper

Crispy Baked Tofu:

  • 450g extra-firm tofu, pressed and drained
  • 1 tbsp tamari
  • 1/2 tbsp sesame oil
  • 1 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • pinch of pepper

Crispy Broccolini:

  • 1 bunch broccolini, stems cut in half
  • 1 tbsp nutritional yeast
  • 1/2 tbsp sesame oil
  • 1/2 tsp garlic powder
  • 2 tsp sesame seeds
  • pinch of salt and pepper

Other Ingredients:

  • 1 cucumber, sliced
  • 2 spring onions, chopped
  • 1/3 cup coriander, chopped
  • 1/4 cup mint leaves
  • 1 cup edamame beans, cooked and shelled
  • 270g dry soba noodles

Garnish:

  •  sesame seeds
  • fried shallots
  • crispy chilli oil

Preparations:


  1. Preheat oven to 200°C and line two baking trays.

  2. Spread the broccolini over one baking tray. Drizzle over the sesame oil, nutritional yeast, garlic powder, sesame seeds, salt and pepper. Toss to coat evenly.

  3. Use your fingers to crumble the tofu over the other baking tray. Drizzle over the tamari, sesame oil, nutritional yeast, garlic powder, smoked paprika and pepper. Toss to coat evenly.

  4. Place both trays into the oven. Bake the broccolini for 20 to 25 minutes, or until the stems are tender and the tops are charred. Bake the tofu for 30 to 35 minutes, stirring halfway, or until golden and crisp.

  5. Meanwhile, mix all the ingredients for the miso tahini sauce in a medium bowl until smooth. Add a dash more water if needed.

  6. Heat a saucepan of water over high heat. Once boiling, add the soba noodles and cook according to package instructions. Remove from heat, pour over cold water and drain.

  7. To serve, spread most of the sauce over the bottom of a plate. Top with the soba noodles, cucumber, roasted broccolini, edamame beans, crispy baked tofu, extra sauce and fresh herbs. Garnish with crispy chilli oil, sesame seeds and fried shallots and serve.

  • 1 cucumber, sliced

  4. Place both trays into the oven. Bake the broccolini for 20 to 25 minutes, or until the stems are tender and the tops are charred. Bake the tofu for 30 to 35 minutes, stirring halfway, or until golden and crisp.
  5. Meanwhile, mix all the ingredients for the miso tahini sauce in a medium bowl until smooth. Add a dash more water if needed.
  6. Heat a saucepan of water over high heat. Once boiling, add the soba noodles and cook according to package instructions. Remove from heat, pour over cold water and drain.
  7. To serve, spread most of the sauce over the bottom of a plate. Top with the soba noodles, cucumber, roasted broccolini, edamame beans, crispy baked tofu, extra sauce and fresh herbs. Garnish with crispy chilli oil, sesame seeds and fried shallots and serve.
