Ingredients:
Curried Rice Paper Sausage Rolls:
- 450g firm tofu, crumbled with hands
- 2 tbsp curry paste (I used red, but yellow or green would also work)
- 1 tbsp tamari
- 1 tsp garlic powder
- pinch of salt and pepper
- 6 sheets rice paper
- 1 – 2 tbsp extra virgin olive oil
Optional Garnish:
- sesame seeds
Preparations:
- Preheat your oven to 200°C and line a baking tray with baking paper.
- In a large bowl, combine the crumbled tofu, curry paste, tamari, garlic powder, salt, and pepper. Mix thoroughly until the tofu is evenly coated.
- Fill a shallow dish with warm water. Dip each sheet of rice paper briefly (5 – 10 seconds) until just pliable. Don’t over-soak, they’ll soften more as you work.
- Place the softened sheet on a clean surface. Spoon roughly 4 tablespoons of the curried tofu mixture onto the lower third of the rice paper. Fold the sides inward, then roll tightly from the bottom up to form a sealed roll.
- Repeat with all 6 sheets.
- Brush each roll lightly with olive oil and place them seam-side down on the prepared tray. Optional top with sesame seeds.
- Bake for 20 – 25 minutes, flipping halfway, until the rolls are golden and lightly crisp. Remove from the oven and serve hot.
