20-Minute Air Fryer Crumble
I’m obsessed with quick desserts, especially those that are plant-based and made with healthier ingredients. Switching it up with a banana and tahini caramel base that’s topped with a toasty and sweet almond meal crumble.

Serves: 4
Ingredients:
Base:
- 2 overripe bananas, mashed
- 4 Medjool dates, chopped
- 2 tbsp tahini
- 2 tbsp rice malt syrup
- 1 tsp vanilla extract
- 1 tbsp water
Top:
- 3 tbsp vegan butter, room temperature
- 2 tbsp granulated monk fruit sweetner
- 1 tsp vanilla extract
- 1/3 cup almond meal
- 1/3 cup vanilla protein powder
- 1 tsp ground cinnamon
- pinch of salt
Garnish:
- vanilla coconut yoghurt
- dark chocolate, shaved
Preparations:
- In a small bowl, mix the tahini, rice malt syrup, vanilla extract and water to form a tahini caramel.
- Mash bananas in a 20cm baking tin. Mix in the chopped dates and tahini caramel.
- In a small bowl, mix the vegan butter and monk fruit sweetener with your hands until well combined. Add the vanilla extract, almond meal, vanilla protein and cinnamon. Mix with your hands until a crumble forms.
- Top the base with the crumble until it is fully covered. Cook in the air fryer at 180 for 15 to 20 minutes, or until the top is golden. Remove from the air fryer and allow to rest for 5 minutes to crisp up.
- Scoop into bowls and top with vanilla coconut yoghurt and shaved dark chocolate.
