Roasted Beetroot and Falafel Salad

A vibrant, nourishing salad packed with colour and flavour! Roasted beetroot and creamy garlic blend into a silky beet dip, topped with Tahina Red and Green Falafels, crispy quinoa, fresh cucumber, and tangy vegan feta. This wholesome salad bowl is hearty, plant-powered, and perfect for a balanced lunch or dinner.

Ingredients:

Roasted Beetroot and Roasted Beetroot Butter Bean Dip:

  • 4 beetroot, peeled and diced
  • 1 small bulb garlic, head chopped off to expose cloves
  • 6 tbsp olive oil
  • 1 can (400g) butter beans, drained and rinsed
  • juice of 1/2 lemon
  • 1/4 cup tahini
  • 1 tsp ground cumin
  • 2 tsp maple syrup
  • pinch of salt and pepper

Crispy Quinoa:

  • 1 cup uncooked quinoa, rinsed and drained
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • pinch of salt and pepper

Preparations:


  1. Preheat oven to 200°C and line 3 baking trays.

  2. Toss all diced beetroot with 2 tbsp olive oil, salt, and pepper. Spread on a tray. Wrap garlic bulb (drizzled with 1 tbsp oil) in foil and place on tray. Roast 30 to 40 minutes, or until tender.

  3. Blend half the roasted beetroot, all of the roasted garlic (squeezed out of skin), butter beans, lemon juice, tahini, cumin, maple syrup, 3 tbsp olive oil, salt, and pepper until smooth. Add more olive oil if needed. Reserve remaining beetroot.

  4. Simmer quinoa in 2 cups water for 15 min. Rest 5 minutes, then fluff.

  5. Spread quinoa on a tray, drizzle with oil, season with cumin, salt, and pepper. Bake 20 to 25 minutes, stirring halfway, until golden and crisp. Allow to cool to crisp further.

  6. Place falafels on a tray and bake 15 minutes, until warmed through and crisp.

  7. Spread beetroot dip on a plate. Top with falafels, reserved beetroot, cucumber, parsley, feta, crispy quinoa, and sesame seeds.
