Ingredients:
Protein Whip:
- 1 cup vanilla coconut yoghurt
- 2/3 cup vanilla protein powder
- 1/4 cup peanut butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- pinch of salt
Raspberry Compote:
- 1 cup fresh raspberries
- 1 tbsp maple syrup
- 1 tbsp arrowroot flour
- 1 tsp vanilla extract
Other Ingredients:
- 3 bagels, sliced in half
- 1 banana, sliced
- 3 tbsp soy crisps
Preparations:
- Add the coconut yoghurt, protein powder, peanut butter, maple syrup, vanilla extract, cinnamon, and salt to a large bowl and whisk until well combined. Alternatively, add to a blender and blend until smooth, thick, and fluffy.
- Add raspberries, maple syrup, vanilla extract and arrowroot flour to a small saucepan over medium heat. Cook for 3 to 5 minutes until the raspberries break down and the mixture thickens. Remove from heat and let cool slightly.
- Toast the bagels until golden if desired.
- Top one half with sliced banana and a generous layer of the protein peanut whip. Sprinkle over the soy crisps and dollop on the raspberry compote. Close with the other half of the bagel and eat immediately.
