Pistachio, Matcha, Banana and Date Chocolate Bark: Featured on The Morning Show!

An indulgent, minimal ingredient and easy-to-make dessert that I made on the Channel 7 Morning Show! Featuring layers of chewy Medjool dates and banana slices, my velvety Pistachio Matcha Crema and my favourite plant-based chocolate, Pana Organic. Pistachio, Matcha, Banana and Date Chocolate Bark: Featured on The Morning Show!

An indulgent, minimal ingredient and easy-to-make dessert that I made on the Channel 7 Morning Show! Featuring layers of chewy Medjool dates and banana slices, my velvety Pistachio Matcha Crema and my favourite plant-based chocolate, Pana Organic. Chocolate Bark:

Preparations:


  1. Slice the banana into 0.5-1cm-thick coins.

  2. Carefully slice open the dates and remove the pips. Flatten each date by spreading it open.

  3. Line a baking tray with parchment paper. Arrange the banana coins and flattened dates in a single layer, pressing them gently together to form a compact base.

  4. Spoon the pistachio matcha crema over the banana and date layer, then spread it evenly with the back of a spoon to fully cover.

  5. In a heatproof bowl set over a saucepan of simmering water, melt the chocolate with the coconut oil, stirring until smooth.

  6. Pour the melted chocolate over the pistachio matcha layer, spreading to cover. Garnish with crushed pistachios.

  7. Freeze for at least 3 hours, or until fully set and the base can be cleanly separated from the parchment.

  8. Break or slice into chunks and serve.
