I’ve been completely obsessed with the hash browns from a local café, they’re golden, crispy, and just ridiculously good. One day, mid-bite, I had the idea to stuff them into soft, fluffy bao buns… and it turned out to be the best decision ever. These bao are loaded with those dreamy hash browns, a punchy Asian slaw, creamy vegan aioli, fresh cucumber ribbons, and all the toppings. Finished with a drizzle of chilli oil and a squeeze of lime, these flavour-packed buns are the perfect mix of crunch, creaminess, and zing.

Crispy Hash Brown Bao Buns

Ingredients:

Asian Slaw

  • ½ head purple cabbage, finely sliced
  • 1 carrot, grated
  • 2 spring onions, finely sliced
  • 2 tbsp sesame seeds
  • 2 tbsp roasted peanuts, roughly chopped
  • ½ cup fresh coriander, chopped
  • ¼ cup fresh mint, chopped

Dressing

  • 2 tbsp extra-virgin olive oil
  • 2 tbsp maple syrup
  • 2 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • ½ tbsp fresh ginger, grated
  • 1 clove garlic, grated

Other Ingredients

  • 4 vegan bao buns, steamed
  • 4 hash browns, cooked
  • 4 tbsp vegan aioli
  • 1 cucumber, ribboned
  • 1 lime, quartered

Optional Toppings

  • crispy chilli oil
  • extra sesame seeds
  • fresh coriander
  • finely sliced spring onions

Preparations:


  1. In a large bowl, combine the cabbage, carrot, spring onions, sesame seeds, roasted peanuts, coriander, and mint. Toss well.

  2. In a small jar or bowl, whisk together the olive oil, maple syrup, rice vinegar, soy sauce, sesame oil, ginger, and garlic until smooth. Pour the dressing over the slaw and mix thoroughly to coat. Set aside.

  3. Spread 1 tablespoon of vegan aioli inside each steamed bao bun. Add a hash brown, a generous spoonful of the slaw, and a few ribbons of cucumber.

  4. Add any optional toppings you like, crispy chilli oil, extra sesame seeds, fresh coriander, or spring onions. Serve with lime wedges on the side.
