I had the best bruschetta of my life in Positano, and it reminded me how incredible simple ingredients can be when they’re fresh and well prepared. This classic Italian starter features crispy toasted bread rubbed with garlic and topped with juicy tomatoes, basil, and olive oil. Light, fresh, and full of flavour, it’s a dish that captures the spirit of Italian cooking and is perfect for sharing.

Classic Bruschetta

Ingredients:

Bruschetta:

  • 1 baguette or rustic loaf, sliced
  • 3 ripe tomatoes, diced
  • 1 garlic clove
  • 2 tbsp olive oil, plus extra to drizzle
  • 3 tbsp fresh basil leaves, chopped
  • pinch of salt and pepper

Preparations:


  1. Toast or grill the bread slices until golden and crisp.

  2. Rub the warm toasted bread lightly with the garlic clove.

  3. In a bowl, combine the diced tomatoes, olive oil, chopped basil, salt, and pepper.

  4. Spoon the tomato mixture onto the toasted bread.

  5. Finish with a drizzle of olive oil, pinch of salt and serve immediately.
