Ingredients:
Base:
- 1 small banana, sliced into coins
- 8 medjool dates, pips removed and sliced in half
Tahini Caramel:
- 1/3 cup tahini
- 1/4 cup rice malt or maple syrup
- 1 tsp vanilla extract
- 2 tbsp water
Chocolate:
- 80g choice of chocolate
- 1 tbsp coconut oil
- pinch of salt
Preparations:
- Line a baking tray. Layer the dates and banana coins on the baking tray and lightly press to push together.
- Mix the ingredients for the tahini caramel in a small bowl. Pour over the banana and dates and spread with a spoon. Set aside in the freezer.
- Place the chocolate and coconut oil into a microwave-safe dish and melt in the microwave in 20-second increments, stirring between each, until melted. Alternatively, melt chocolate in a double boiler.
- Pour the chocolate on top of the caramel, spread with a spoon and garnish with flaky sea salt. Set in the freezer for 3 to 4 hours, or until the top is set and you can pull the baking paper away from the base.
