5 Ingredient Patatas Bravas

This is my “cheats” version of Patatas Bravas inspired by my recent travels to Barcelona, Spain. Whilst the traditional version uses far more ingredients, I have simplified the Bravas sauce to just four: crushed tomatoes, garlic, red wine vinegar and smoked paprika. Still packing so much rich and smokey goodness, it’s the perfect sauce to drizzle over crispy oven-roasted potatoes. Serve as an easy appetiser or as a side to a plant-based main course.

5 Ingredient Patatas Bravas

Ingredients:

“Cheats” Bravas Sauce:

  • 1 x 400g can crushed tomatoes
  • 2 cloves garlic, finely diced
  • 1 tsp smoked paprika
  • 1 tsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • pinch of salt and pepper

Potatoes:

  • 8 potatoes, chopped into 2cm chunks
  • 2 tbsp extra virgin olive oil
  • pinch of salt and pepper

Optional Garnish:

  • chilli flakes
  • fresh herbs
  • vegan aioli or garlic cashew cream

Preparations:


  1. Preheat oven to 220°C and line a baking tray with baking paper.

  2. Place chopped potatoes into a bowl and drizzle over the olive oil. Season well with salt and pepper and toss to coat evenly.

  3. Spread over the baking tray and roast in the oven for 45 minutes, or until tender and golden.

  4. Meanwhile, heat a tablespoon of olive oil in a pan over low to medium. Add the garlic and sauté for 1 to 2 minutes. Add the smoked paprika and sauté for a further minute, or until fragrant.

  5. Add the red wine vinegar and crushed tomatoes. Pour 1/4 cup of water into the crushed tomato can, swirl and pour into the pan. Cook over low to medium for 7 to 10 minutes, stirring regularly, or until slightly thickened. Remove from heat.

  6. Pour the sauce into a blender and blend until smooth.

  7. To serve, place the potatoes in a shallow bowl or plate and spoon over the bravas sauce. Optionally garnish with vegan aioli, chilli flakes and fresh herbs.
