Creamy chocolate banana ice cream bars with pops of crushed strawberry, made with no ice cream maker. Frozen in bags and unwrapped like a homemade ice block, they're an easy, better-for-you treat to keep in the freezer.
Prep Time: 15 Minutes + 4 Hours to Set
Cook Time: 1 Minute
Serves: 3
Ingredients:
Chocolate Banana Filling:
- 1 banana
- 2 tbsp peanut butter
- 1/2 tsp vanilla extract
- 80g dark chocolate, melted
Other:
- 6 strawberries, two per bag
Preparations:
- Melt the dark chocolate either in a double boiler, stirring gently over a pot of simmering water until smooth, or in the microwave, heating in 20-30 second bursts and stirring between each, until fully melted.
- Add the banana, peanut butter, vanilla extract and melted chocolate to a blender and blend until smooth and creamy.
- Place 2 strawberries in each of 3 ziplock bags and crush directly in the bag with the back of a rolling pin.
- Divide the blended mixture evenly between the 3 bags.
- Seal the bags, pressing out any excess air, and lay flat in the freezer for 4 hours, or until fully frozen.
- To serve, cut a corner off each bag and rip the bag open to remove the frozen bar.
