Ingredients:
Cashew Ricotta:
- 1 cup raw cashews
- juice of half a lemon
- 1 clove garlic
- 1/4 cup nutritional yeast
- 1/2 cup soy milk, or as needed
- pinch of salt and pepper
Preparations:
- Place the cashews into a bowl of boiling hot water, soak for 10 minutes and drain.
- Transfer the cashews into a food processor with the lemon juice, garlic, nutritional yeast, soy milk, salt and pepper. Process until smooth, adding more soy milk if needed.
- Transfer to a jar and store in the fridge. Use in or to garnish pasta, salad, soup, toasted sandwiches or roasted vegetables.
