Ingredients:

Cashew Ricotta:

  • 1 cup raw cashews
  • juice of half a lemon
  • 1 clove garlic
  • 1/4 cup nutritional yeast
  • 1/2 cup soy milk, or as needed
  • pinch of salt and pepper

Preparations:


  1. Place the cashews into a bowl of boiling hot water, soak for 10 minutes and drain.

  2. Transfer the cashews into a food processor with the lemon juice, garlic, nutritional yeast, soy milk, salt and pepper. Process until smooth, adding more soy milk if needed.

  3. Transfer to a jar and store in the fridge. Use in or to garnish pasta, salad, soup, toasted sandwiches or roasted vegetables.
