5 Ingredient Bounty Chocolate Cups

A healthier twist on classic peanut butter cups, these no-bake chocolate cups are filled with a creamy coconut cashew centre and coated in rich Pana Organic chocolate. Made with just five simple ingredients: cashews, coconut milk, maple syrup, vanilla, and chocolate. They’re vegan, naturally sweetened, and irresistibly delicious.

Ingredients:

Cashew Coconut Caramel:

  • 1 cup raw cashews, soaked in hot water for 10 minutes and drained
  • 1/4 cup full-fat canned coconut milk
  • 1/2 cup maple syrup 
  • 1 tsp vanilla extract

Chocolate:

Preparations:


  1. To a food processor or high speed blender, add the cashews, coconut milk, maple syrup and vanilla extract. Process until smooth.

  2. Fill a saucepan with an inch of water and bring it to a simmer, then place a heat-proof bowl over the top. Place the baking mylk chocolate into the bowl and stir with a spatula until there are still a few small pieces of chocolate left. Remove from heat and continue stirring until completely melted and smooth.

  3. Spoon 2/3 of the melted chocolate into a mini muffin silicon tray. Spoon roughly 2 teaspoon of the cashew coconut caramel in the centre, and cover with the remaining chocolate. This should make around 7 to 8 cups.

  4. Place in the freezer and set for an hour, or until the chocolate is solid. Pop out of the silicon moulds and serve.
