Smashed Butter Beans with Chimichurri

Ingredients:
Butter Beans:
- 2 x 400g cans butter beans, drained and rinsed
- 4 tbsp extra virgin olive oil
- 2 tbsp nutritional yeast
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- pinch of salt and pepper
Chimichurri:
- 1 cup fresh parsley, finely chopped
- 2 tbsp fresh oregano leaves
- 3 garlic cloves
- 1 small fresh chilli, seeds removed and chopped
- 2 tbsp red wine vinegar
- 1/4 cup extra virgin olive oil
- 1/4 tsp of salt, more if needed
- pinch of pepper
Preparations:
- Preheat the oven to 220°C (425°F) and line a baking tray with baking paper.
- Toss the beans with the olive oil, nutritional yeast, smoked paprika, garlic powder, onion powder, salt and pepper.
- Spread the butter beans out in a single layer and gently smash with the back of a fork. Smash roughly 2/3 of them, leaving some whole for texture.
- Roast for 25 to 30 minutes, flipping halfway through, until golden and crispy around the edges.
- Add the garlic and salt to a mortar and pestle and grind into a smooth paste.
- Add the chopped chilli and pound to combine.
- Add the parsley and oregano in batches, pressing and twisting to bruise the herbs without fully puréeing.
- Stir in the red wine vinegar, then slowly drizzle in the olive oil until loose and spoonable.
- Taste and adjust seasoning if needed.
- Spoon the chimichurri generously over the hot crispy butter beans, mix and serve immediately.
