Ingredients:
Crust:
- 15 digestive biscuits
- 2 tbsp water
- 1 tbsp maple syrup
Filling
- 1/2 cup cashews, soaked in hot water for 10 minutes and drained
- 1 ripe banana
- 1/2 cup vanilla coconut yoghurt
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- pinch of salt
Topping
- fresh strawberries, one per cup, cut into a heart by removing a small triangle from the stem
Preparations:
- Crush the digestive biscuits into fine crumbs using a food processor.
- Add the water and maple syrup to the crumbs and mix until the texture resembles damp sand.
- Divide the mixture evenly between serving cups or a silicon muffin tray (making roughly 10) and press firmly into the base using the back of a spoon.
- Add the soaked and drained cashews, banana, coconut yoghurt, maple syrup, vanilla extract, and salt to a high-speed blender.
- Blend until completely smooth and creamy, scraping down the sides as needed.
- Spoon the filling evenly over the biscuit bases and smooth the tops.
- Top with the strawberry and refrigerate for at least 3 hours, or until set and slightly firm to the touch.
- Just before serving, remove from the freezer for 5 minutes to soften and serve.
