Rolled noodles are my current obsession. They’re chewy, soft and quick to cook. Paired with a hot and creamy gochujang sauce for a punch of flavour and TVP for extra chewiness and protein.

Gochujang Rolled Noodles

Ingredients:
Noodles:
- 1kg rolled noodles
- 1 tbsp toasted sesame oil
- 2 tbsp tamari
- 2 tbsp sriracha
Creamy Gochujang Sauce:
- 1/2 cup tahini
- 1/4 cup gochujang paste
- 1/4 cup tamari
- 1 tbsp rice malt syrup
- 2 tsp toasted sesame oil
- juice of half a lime
- 1 tsp garlic powder
- 2 tbsp water
- pinch of pepper
TVP:
- 1 tbsp toasted sesame oil
- 1/3 cup creamy gochujang sauce
- 1 cup TVP (textured vegetable protein), soaked in hot water for 10 minutes and drained
Garnish:
- chilli
- spring onions
- crispy shallots
- sesame seeds
- coriander
Preparations:
- Place all creamy gochujang sauce ingredients into a bowl and mix until smooth.
- Heat sesame oil in a pan over medium heat. Add the rolled noodles and sauté for 2-3 minutes.
- Add the tamari and sriracha and mix well. Cook for a further 2-3 minutes, or until the noodles are soft. Remove from heat.
- Meanwhile, heat sesame oil in another pan over medium heat and add the tvp and 1/3 cup of the creamy gochujang sauce. Cook for 5 minutes, or until the sauce is fully absorbed and the TVP is beginning to brown.
- To serve, spread the rolled noodles over a serving plate. Drizzle over the creamy gochujang sauce and garnish.
