Chickpea Choc Chip Blondies

These vegan blondies are proof that dessert can do double duty. Built on a base of chickpeas and banana instead of flour and butter, they bake up dense, chewy, and packed with gooey chocolate in every bite. No one will guess what’s actually in them! One bowl, one tray, minimal cleanup.

Chickpea Choc Chip Blondies

These vegan blondies are proof that dessert can do double duty. Built on a base of chickpeas and banana instead of flour and butter, they bake up dense, chewy, and packed with gooey chocolate in every bite. No one will guess what's actually in them! One bowl, one tray, minimal cleanup.

Ingredients:

Wet Ingredients:

  • 1 and 1/2 cups cooked chickpeas
  • 2 overripe bananas
  • 1/3 cup maple syrup
  • 2 tbsp coconut sugar (optional for a slight caramel flavour to the blondies)
  • 1/4 cup peanut butter
  • 1 tsp vanilla extract

Dry Ingredients:

  • 1 and 1/2 cups almond meal
  • 1 tsp baking powder
  • pinch of sea salt
  • 80g dark chocolate, chopped

Preparations:


  1. Blend the cooked chickpeas, bananas, maple syrup, coconut sugar, vanilla and peanut butter until smooth and thick.

  2. Stir in the almond meal, baking powder and sea salt until just combined. The batter should be thick and scoopable, not pourable.

  3. Fold through the chopped chocolate, saving a few pieces to press on top.

  4. Spread the batter into a lined square (20x20cm) baking pan, smoothing the top. Press the reserved chocolate into the surface.

  5. Bake at 170°C for 25 minutes, until the edges are set and the centre is just firm to a light touch but still soft underneath.

  6. Cool fully in the pan before lifting out and slicing. Don’t cut warm, they firm up as they cool.
