Cherry Ripe Yoghurt Chia Cups

Ingredients:

Yoghurt Chia Cups:

  • 1/3 cup coconut yoghurt
  • 1/4 cup vanilla protein powder
  • 1 tbsp chia seeds
  • 1 tbsp peanut butter
  • 2 to 3 tbsp soy milk, more if needed
  • 1/2 tbsp maple syrup
  • 1/4 tsp vanilla extract

Chocolate Crackle:

  • 20g Pana Organic Sour Cherry & Madagascan Vanilla Chocolate or Baking Dark Chocolate
  • pinch of salt, optional

Preparations:


  1. In a jar, mix the coconut yoghurt, vanilla protein powder, chia seeds, peanut butter, maple syrup and vanilla extract until smooth and well combined. Add soy milk, starting with 2 tbsp, to thin. Add more if needed

  2. Set aside in the refrigerator.

  3. Melt the dark chocolate gently (microwave or double-boiler) and stir through the pinch of salt if using.

  4. Pour the melted chocolate over the yoghurt chia cup to create a thin crackle layer.

  5. Refrigerate for 2 to 3 hours, or overnight, until the mixture has thickened and the chocolate shell has set.
