Sun-Dried Tomato Gnocchi Bake

Sun-dried tomato baked gnocchi might just be my new favourite comfort meal. Pillowy soft gnocchi baked in a rich sun-dried tomato sauce with garlic, herbs, and just the right amount of melty cheese on top. It’s one of those dishes that feels fancy but is secretly super easy (a blessing for my sweet sous-chef who’s new to cooking 😅). This was such a cozy, satisfying dinner and the perfect kickoff to my partner and I’s new little cooking series together.

Sun-Dried Tomato Gnocchi Bake

Sun-dried tomato baked gnocchi might just be my new favourite comfort meal. Pillowy soft gnocchi baked in a rich sun-dried tomato sauce with garlic, herbs, and just the right amount of melty cheese on top. It’s one of those dishes that feels fancy but is secretly super easy (a blessing for my sweet sous-chef who’s new to cooking 😅). This was such a cozy, satisfying dinner and the perfect kickoff to my partner and I's new little cooking series together.

Ingredients:

Gnocchi Bake:

  • 1 tbsp oil from jarred sun-dried tomatoes or olive oil
  • 1/2 brown onion, finely diced
  • 1 clove garlic, finely diced
  • 1/4 cup tomato paste
  • 1/4 cup nutritional yeast
  • 2 x 400g cans finely diced tomatoes
  • 2 tsp rice malt syrup
  • 2 tsp dried Italian herbs
  • 1 tsp chilli flakes
  • pinch of salt and pepper
  • 500g packet gnocchi
  • 1/2 cup marinated jarred sun-dried tomatoes
  • 1 bunch broccolini, bottoms removed and stems sliced in half
  • 1/2 cup vegan cheese

Garnish:

  • fresh basil leaves

Preparations:


  1. Preheat oven to 200°C.

  2. Heat the oil from the jarred sun-dried tomatoes (or olive oil) over medium to high in a pan. Add the onion and sauté for 3 to 4 minutes or until translucent. Add the garlic and dried Italian herbs and season well with salt and pepper. Sauté for a further minute or until fragrant.

  3. Add the chilli flakes, nutritional yeast, tomato paste, rice malt syrup and canned tomatoes. Cook for 5 minutes, or until slightly thickened. Remove from heat.

  4. Pour the sauce into a glass baking dish. Add in the gnocchi, sun-dried tomatoes and broccolini and mix well. You want the gnocchi to be as covered by the sauce as possible to cook and become soft and pillowy. Top with the vegan cheese and bake in the oven for 25 minutes, or until the edges have begun to brown and the cheese is melty.

  5. Remove from the oven and allow to cool for 5 minutes. Transfer the gnocchi bake to serving bowls and optionally garnish with fresh basil leaves.
