Chickpea Banana Cake Cookies
These fudgy chickpea banana cake cookies are the ultimate soft baked treat and a brilliant way to use up overripe bananas sitting on your counter. Naturally sweetened with maple syrup and made with almond meal, they are completely gluten free and packed with melty chocolate. They bake up thick, soft, and almost cake like in the center. Blended chickpeas create a smooth, protein-rich base that adds structure, moisture, and a boost of fibre without any bean flavour at all.

Serves: 9
Ingredients:
Cake Cookies:
- 1 and 1/2 cups cooked chickpeas
- 2 overripe bananas
- 1/3 cup maple syrup
- 3 tbsp peanut butter
- 1 and 1/3 cup almond meal
- 1 tsp baking soda
- 1 tsp vanilla extract
- pinch of sea salt
- 80 g vegan chocolate, chopped
Preparations:
- Preheat the oven to 175°C (350°F) and line 1 to 2 baking trays with parchment paper.
- Blend the chickpeas, bananas, maple syrup, peanut butter and vanilla extract in a blender and process until smooth and creamy.
- Transfer to a mixing bowl and stir in the almond meal, baking soda, and a small pinch of flaky sea salt until combined.
- Fold in half of the chopped chocolate, reserving the other half for topping.
- Using a spoon, dollop 9 equal portions of the batter onto the lined baking tray. The mixture will be quite wet, so gently shape and smooth each cookie with the back of the spoon.
- Press a few pieces of the reserved chocolate on top of each cookie.
- Bake for 20 to 22 minutes, until the tops are set but still soft.
- Allow cookies to cool completely on the tray for around 20 minutes (they will firm up as they cool) and serve.
