Ingredients:
Tofu Mince:
- 1 x 350g block extra-firm tofu, pressed
- 1/2 brown onion, finely diced
- 1 clove garlic, minced
- 1 tbsp soy sauce
- 1 tsp smoked paprika
- pinch of salt and pepper
- 1 tbsp olive oil
Cashew Cheese Sauce:
- 1 cup raw cashews, soaked in hot water for 10 minutes
- 3/4 cup soy milk
- juice of half a lemon
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/4 tsp turmeric
- pinch of salt
Homemade Ketchup:
- 1/2 cup tomato paste
- 2 tbsp maple syrup
- 1 tbsp tamari
- 2 tbsp lemon juice
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- pinch of salt
- water, to thin
Toppings:
- 1 head cos lettuce, finely shredded
- 1/2 cup dill pickles, chopped
Preparations:
- Preheat the oven according to the chip packet instructions. Spread the frozen chips onto a large baking tray in a single layer and bake until golden and crispy, turning halfway through.
- While the chips cook, crumble the pressed tofu finely using your hands until it resembles mince.
- Heat the olive oil in a frying pan over medium heat and cook the diced onion for 4 minutes until soft and lightly golden.
- Add the garlic and cook for 30 seconds, then add the tofu, soy sauce, smoked paprika, salt, and pepper.
- Cook for 8 to 10 minutes, stirring occasionally, until the tofu has dried out and is browned and slightly crispy at the edges.
- Drain the soaked cashews and add them to a blender with the soy milk, lemon juice, garlic powder, onion powder, smoked paprika, turmeric, and salt. Blend until smooth, adding a dash more soy milk if needed.
- In a small saucepan, combine the tomato paste, maple syrup, tamari, lemon juice, garlic powder, onion powder, and a pinch of salt. Add a splash of water and simmer gently for 3 to 4 minutes until smooth and glossy, adjusting sweetness or acidity to taste.
- Once the chips are ready, pile them onto a serving plate or tray. Top with the lettuce and spoon over the tofu mince.
- Add dollops of the ketchup, pour over the cashew cheese sauce and finish with the chopped pickles. Serve immediately.
