Turmeric Latte Overnight Oats

These Turmeric Latte Overnight Oats are the perfect make-ahead breakfast, layered with creamy vanilla oats, warming turmeric and cinnamon, and smooth coconut yoghurt. Ingredients:

Base Oats:

  • 2 cups rolled oats
  • 1/4 cup chia seeds
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Vanilla Layer:

  • half of the oat mixture
  • 1/3 cup coconut yoghurt
  • 1/3 cup vanilla protein powder
  • dash of water or soy milk, if needed

Golden Spice Layer:

  • half of the oat mixture
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg

To Serve:

  • 1/2 cup vanilla coconut yoghurt
  • ground turmeric, for dusting

Preparations:


  1. In a large bowl, combine the rolled oats, chia seeds, maple syrup, vanilla extract and salt. Stir until evenly mixed.

  2. Divide the mixture evenly between two bowls.

  3. To one bowl, add the coconut yoghurt and vanilla protein powder. Stir until smooth and creamy, adding a splash of water or soy milk if needed to loosen the mixture. This is your vanilla layer.

  4. To the second bowl, add the turmeric, cinnamon and nutmeg. Stir until the spices are evenly distributed. This is your golden spice layer.

  5. Assemble two jars by layering the vanilla layer, coconut yoghurt, golden spice layer, coconut yoghurt, vanilla layer and coconut yoghurt. Finish with a small dollop of the golden spice mixture in the centre and a light dusting of ground turmeric.

  6. Cover and refrigerate overnight, or for at least 3 hours, until thickened and chilled.
