Creamy Green Pea Orzo (Risoni)

This creamy green orzo is everything I want in a comfort meal. Silky, herby, and secretly packed with plant protein. The “sauce” is just blended peas, spinach, basil, parsley, cashews and pine nuts, so you get that rich, cheesy flavour with zero dairy. It’s a 20-minute one-pot dinner that still feels a little bit fancy.

Creamy Green Pea Orzo (Risoni)

This creamy green orzo is everything I want in a comfort meal. Silky, herby, and secretly packed with plant protein. The "sauce" is just blended peas, spinach, basil, parsley, cashews and pine nuts, so you get that rich, cheesy flavour with zero dairy. It's a 20-minute one-pot dinner that still feels a little bit fancy.

Ingredients:

Green Sauce:

  • 1 cup peas
  • 1 cup baby spinach
  • 1 cup basil
  • 1/2 cup parsley
  • 1/2 cup cashews, soaked in hot water for 10 minutes and drained
  • 1/4 cup pine nuts
  • 1/4 cup nutritional yeast
  • juice of 1/2 a lemon
  • 2 cups vegetable broth

Orzo:

  • 1 and 2/3 cups orzo (risoni)
  • 1/2 brown onion, diced
  • 2 cloves garlic, finely diced
  • 1 tbsp extra virgin olive oil
  • 2 cups vegetable broth
  • 1 cup peas
  • 1/3 cup water (only if needed)

Garnish:

  • vegan feta
  • basil leaves

Preparations:


  1. Blend the peas, spinach, basil, parsley, cashews, pine nuts, nutritional yeast and lemon juice with 2 cups of vegetable broth until smooth.

  2. Heat the olive oil in a large fry pan over medium heat and sauté the onion until translucent. Add the garlic and sauté for a further minute.

  3. Add the blended green sauce, the remaining 2 cups of vegetable broth, and the orzo. Stir and bring to a boil.

  4. Reduce to a simmer and cook for 10 minutes, adding the peas at the 8 minute mark and stirring occasionally so the orzo doesn’t stick. Add the extra water if it looks too thick.

  5. Remove from heat, top with vegan feta and basil leaves, and serve.
