Easy Crumpet Tiramisu

Vegan tiramisu but make it lazy. Crumpets soak up espresso just like ladyfingers (arguably better, thanks to all those little holes), layered up with a whipped coconut yoghurt cream and a dusting of cacao on top. No baking required, just assemble and chill. It’s the kind of dessert that looks fancy enough for guests but comes together with barely any effort. Makes two individual tiramisus, perfect for date night or splitting after dinner.

Easy Crumpet Tiramisu

Vegan tiramisu but make it lazy. Crumpets soak up espresso just like ladyfingers (arguably better, thanks to all those little holes), layered up with a whipped coconut yoghurt cream and a dusting of cacao on top. Serves: 4 (Makes 2)

Ingredients:

Espresso Crumpet Layer:

  • 8 crumpets
  • 2 tbsp espresso
  • 1/4 cup maple syrup
  • 1 tbsp vegan butter, melted
  • 1/2 tsp vanilla extract

Cream Layer:

  • 2 cups vanilla coconut yoghurt
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract

To Finish:

  • Cacao powder, for dusting

Preparations:


  1. Toast the crumpets until golden.

  2. In a bowl, whisk together the espresso, maple syrup, melted vegan butter and vanilla extract.

  3. In a separate bowl, mix the coconut yoghurt with the maple syrup and vanilla extract until smooth.

  4. Dip each toasted crumpet into the espresso mixture to soak, then hold up briefly to let the excess liquid drip off.

  5. Press two soaked crumpets into the base of a small circular container.

  6. Spoon over a quarter of the yoghurt cream and spread evenly.

  7. Press two more soaked crumpets on top, followed by another quarter of the yoghurt cream.

  8. Dust generously with cacao powder.

  9. Repeat steps 5 to 8 to build the second tiramisu.

  10. Chill for at least 1 hour before serving.
