5-Ingredient No-Cook Raspberry Jam

A bright, fruity jam that comes together with zero cooking, just defrost, mix and set. Frozen raspberries bring a naturally sweet-tart flavour, lemon juice adds a fresh zing, maple syrup rounds out the sweetness, and a hint of vanilla ties it all together. Psyllium husk works as a natural thickener, giving the jam a glossy, spreadable, slightly jammy texture without any refined pectin or added sugar overload. Psyllium husk also provides a boost of fibre that is great for digestion. Spread it over toast, swirl it through porridge or yoghurt bowls, use it as a filling for baked goods, or spoon it over pancakes.
