Vegan Miso Maple Banana Bread

This vegan banana bread leans into the magic of sweet and savoury. Served with a dollop of coconut yoghurt, it's the kind of bake that feels comforting enough for slow mornings but special enough to share.

Ingredients:

Banana Bread:

  • 3 ripe bananas, mashed
  • 1/3 cup maple syrup
  • 2 tbsp melted vegan butter
  • 1/3 cup soy milk
  • 1 tbsp white miso paste
  • 1 tsp vanilla extract
  • 2 cups plain flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • pinch of salt

 

Miso Maple Peanut Butter Caramel:

  • 2 tbsp maple syrup
  • 1 tsp white miso paste
  • 1 tbsp smooth peanut butter
  • 1 to 2 tsp warm water, to loosen
  • 1/2 tsp vanilla extract

To Serve:

  • Coconut yoghurt

Preparations:


  1. Preheat the oven to 175°C (350°F). Lightly grease and line a loaf tin.

  2. In a large bowl, whisk together the mashed bananas, maple syrup, melted vegan butter, soy milk, white miso and vanilla until smooth.

  3. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon and salt.

  4. Fold the dry ingredients into the wet ingredients until just combined.

  5. Pour the batter into the prepared loaf tin and smooth the top.

  6. Bake for 45 to 50 minutes, or until a skewer inserted into the centre comes out clean or with a few moist crumbs attached.

  7. Allow the loaf to cool in the tin for 10 to 15 minutes before transferring to a wire rack.

  8. While the loaf cools, whisk together the maple syrup, white miso, peanut butter and vanilla. Add warm water a teaspoon at a time until the caramel reaches a smooth, pourable consistency.

  9. Slice the banana bread and serve with coconut yoghurt and a generous drizzle of the miso maple peanut butter caramel.
